Every US state makes a restaurant keep its kitchen exhaust clean, and almost none of them make that easy to find out. We write down what each place actually requires, cite the regulation, and list the companies that do the work — with what we could verify about them and what we could not.

A licence we can name is a government fact. Everything else is the company describing itself. The gap is the useful part.

Suppression over the cookline, plus extinguishers. We already hold state licence data. It publishes when the obligations behind it are cited as carefully as these are.
Where the reference goes furthest
Most of the country gets the fire-code baseline. These jurisdictions have rules of their own, cited to the regulation.
Utah
Licenses the trade. A licence required a background check and proof of insurance.
Nevada
Licenses the trade. Reports stay on site; unfixed deficiencies are reported the next day.
New York
FDNY requires the technician to hold a W-64 Certificate of Fitness. The city publishes no list.
South Carolina
Charleston qualifies vendors and publishes the list. The inspection schedule is in the adopted fire code.
